we need

– 500 grams parsnip chopped

– 1 tbsp olive oil

– a little thyme leaves

– A little salt and pepper

– 1 chopped onion

– 1 tbsp butter

– 2 pear peeled and chopped

– 800 ml vegetable stock

– 600 mL milk

– 75 grams California Walnuts.

For smokey walnuts

– 2 small spoon maple syrup

– 1 teaspoon smoked chili

– 2 teaspoon soy sauce

– 50 grams California Walnuts

– 1 tbsp chopped onions and Walnuts oil for garnish.

Method of making

Preheat oven to 180 degree centigrade and place parsnip on baking tray and apply olive oil over it. Now add the thyme, a little salt and pepper. Now cook in the oven until they turn golden. Meanwhile, to make Smoky California Walnuts, whisk the maple syrup, chilli and soy sauce thoroughly and beat and coat them on the California Walnuts. Then place it on a small baking tray and cook in the oven for 8-10 minutes.

Chill and cut. Put a large saucepan on a low flame, add butter in it and keep stirring the onion till it becomes soft. Now add pear and cook for 8-10 minutes. Then add parsnip and vegetable stock and cook again covered for 15 minutes. Then add milk to it and keep stirring until smooth. Now mix California walnuts and add salt and pepper as per taste. Take out the soup in a bowl and add smoky California walnuts and onions to it. Serve with a few drops of Walnuts Oil.
